White Bean Chili

A hearty dish that is sure to delight.

White Bean Chili

Ingredients

  • 1 Tbsp olive oil

  • 1 medium onion (chopped)

  • 1 large carrot (chopped)

  • ½ stalk of celery (chopped)

  • 2 garlic cloves (minced)

  • 6 cups of low sodium vegetable stock

  • 2 Tbsp chili powder

  • 1 tsp dried thyme

  • 1 tsp oregano

  • 3 cans (15 ounce) white beans (can be cannellini, navy or great northern)

  • 2 cups baby spinach

  • Parmesan cheese or mozzarella cheese to grate onto finished soup

 

Instructions

 

  1. Put olive oil in a stock pot and sauté onions, carrots, and celery for 3 to 5 minutes.

  2. Add vegetable stock and boil for 3 minutes.

  3. Turn burner to medium heat and add spices, beans, and spinach.

  4. Let simmer for 20 to 30 minutes.

  5. Serve with grated cheese.
